Fig, Banana & Chocolate Parfaits

Ingredients:

Fig and Chocolate Layer
1½ cups dried figs, stemmed and sliced in quarters
2/3 cup raw cocoa nibs
1/4 cup almond butter
1/3 cup Wholesome Sweeteners Fair Trade Organic Raw Honey
2 tsp. vanilla
1/4 tsp. cinnamon
1/8 tsp. sea salt

Banana Layer
2-3 ripe bananas, mashed
1-2 tbsp. orange zest
2-3 tbsp. Wholesome Sweeteners Fair Trade Organic Raw Honey

Raspberry Layer
2 baskets raspberries
3 tbsp. lemon juice
3 tbsp. Wholesome Sweeteners Fair Trade Organic Raw Honey
1/3 cup sliced, raw almonds

Directions:
For the fig and chocolate layer, place 1¼ cups figs, cocoa nibs, almond butter, honey , vanilla, cinnamon and sea salt in the work bowl of a food processor. Run for several minutes until it is smooth. (You may need to add a few tablespoons of water to get a smooth texture). Add more water and or honey, to taste, and blend till smooth. Stir in the reserved ¼ cup figs.

For the banana layer, mash the bananas by hand or they will become too liquid. Stir in the orange zest and honey, adjust to taste.

At this point, the two layers can be made up to 4 hours in advance and stored, covered and refrigerated, to be assembled just before serving.

To assemble the parfaits:

Toss 1½ baskets of raspberries with the lemon juice and honey. Use half the fig and chocolate mousse evenly divided in the bottom of 4 tall glasses. Top with half the raspberry lemon mixture. Divide the sliced almonds over the raspberries (this will help create a barrier for the banana layer). Place half the banana layer over the almonds. Repeat the layering with the remaining of each and garnish with the reserved raspberries and additional orange zest, if you like.

Makes 4 parfaits.

Honey & Bear's Roasted Sweet Potatoes

Ingredients:

5 large sweet potatoes, peeled and diced in about 1 inch cubes
¼ c Wholesome Sweeteners Fair Trade Organic Amber Honey
1 tbsp. fresh organic lemon or orange juice
1 tbsp. melted unsalted organic butter or olive oil
Pinch of salt
Fresh rosemary sprigs

Directions:

Preheat oven to 350 F.

Whisk the honey or agave, citrus and butter in a medium bowl. Toss with the diced sweet potatoes and sprinkle ever so lightly with salt. Pour the potatoes evenly into a roasting pan. Roast for 45 minutes to an hour (until the sweet potatoes are fork-tender). Serve with a light garnish of fresh rosemary.
